🍽️ One-Pan Glazed Meatloaf with Roasted Potatoes

🛒 Ingredients
Meatloaf

1½ lb (680 g) ground meat (80/20 beef OR beef/pork mix)

1 cup breadcrumbs (plain or Italian)

½ cup milk
-
1 small onion, finely diced

2 cloves garlic, minced
-
2 large eggs
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp smoked paprika
-
1 tsp Italian seasoning
-
1 tbsp Worcestershire sauce
Glaze
-
½ cup ketchup
-
2 tbsp brown sugar
-
1 tbsp Worcestershire sauce
-
1 tsp mustard (optional)
Roasted Potatoes
-
1½–2 lb baby potatoes or russet potatoes, cubed
-
3 tbsp olive oil
-
1 tsp salt
-
½ tsp black pepper
-
1 tsp garlic powder
-
1 tsp paprika
-
½ tsp dried thyme or rosemary
🔪 Instructions
1. Preheat & Prep

Preheat oven to 375°F (190°C).

Lightly grease your foil pan or roasting pan.
2. Season the Potatoes
In a bowl, toss potatoes with:

olive oil
-
salt
-
pepper
-
garlic powder
-
paprika
-
thyme/rosemary
Spread them around the edges of the pan, leaving the center open.
3. Make the Meatloaf
In a large bowl:

Mix breadcrumbs and milk. Let soak 1 minute.

Add onion, garlic, eggs, salt, pepper, paprika, Italian seasoning, Worcestershire.

Gently mix in the ground meat just until combined (don’t overmix or it’ll be dense).
Form into a loaf and place in the center of the pan, surrounded by potatoes.
4. Make the Glaze
Mix together:

ketchup

brown sugar
-
Worcestershire
-
mustard (if using)
Spread half the glaze evenly over the meatloaf.
5. Bake

Bake uncovered for 40 minutes.

Remove pan, flip/stir potatoes for even browning.

Spread remaining glaze over meatloaf.
Return to oven and bake 15–20 more minutes, until:

Meatloaf reaches 160°F (71°C) internal temp

Potatoes are golden and tender
6. Rest & Serve

Let meatloaf rest 10 minutes before slicing.
