🧾 Ingredients

  • 1½ lbs baby potatoes (gold or red), halved

  • 14–16 oz smoked sausage (kielbasa, beef, chicken, or pork), sliced into thick rounds

  • 1 large yellow onion, chopped or sliced

  • 3 tbsp olive oil

  • 2 tbsp butter, melted (optional but highly recommended)

  • 3 cloves garlic, minced

Seasoning

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp smoked paprika (for deeper flavor)

  • ½ tsp garlic powder

  • ½ tsp dried thyme or rosemary

  • Optional: pinch of red pepper flakes


👩‍🍳 Instructions


1️⃣ Preheat & Prep

  1. Preheat oven to 220°C / 425°F.

  2. Lightly grease a large baking sheet or roasting pan.


2️⃣ Season the Potatoes

  1. In a large bowl, toss potatoes with:

    • Olive oil

    • Salt, pepper

    • Paprika, garlic powder

    • Dried herbs

  2. Spread potatoes evenly on the pan (cut side down if possible).


3️⃣ Add Sausage & Onions

  1. Scatter sausage slices and onions over the potatoes.

  2. Add minced garlic.

  3. Drizzle melted butter over everything for richness.


4️⃣ Roast

  1. Roast uncovered for 20 minutes.

  2. Remove from oven and stir everything well.

  3. Return to oven and roast another 15–20 minutes, until:

  • Potatoes are fork-tender

  • Sausage is browned and caramelized

  • Onions are soft and golden

🔥 For extra crispiness, broil for 2–3 minutes at the end.
