1 tbsp butter
Instructions
1. Prep the Wings (Very Important)
Pat wings completely dry with paper towels.
Moisture = soggy skin.
Place wings in a large bowl.
Toss with:
Baking powder
Salt
Pepper
Smoked paprika
Garlic & onion powder
Let sit uncovered in the fridge 30 minutes if you have time (extra crisp).
2. Cook the Wings
Oven Method (Recommended)
Preheat oven to 425°F (220°C).
Place wings on a wire rack over a foil-lined baking sheet.
Bake 25 minutes, flip, then bake 20–25 more minutes.
Wings should be golden, crispy, and rendered.

3. Make the Sticky Glaze
In a saucepan over medium heat, add:

Chili flakes

Add butter and stir until glossy and thick enough to coat a spoon.
Remove from heat.
4. Glaze & Caramelize
