🧀 Oven-Baked Cheesy Toast Sandwiches

🍞 Ingredients (makes 6 sandwiches)

  • 12 slices white or sandwich bread

  • 2 cups grated cheese

    • Best combo: mozzarella + cheddar

    • Or use just one if you prefer

  • 3 tbsp butter (softened)

  • 2 tbsp mayonnaise (optional but highly recommended – makes it extra creamy)

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • ½ tsp garlic powder (optional)

  • ½ tsp dried oregano or mixed herbs (optional)

  • 1–2 tbsp milk or cream (for extra meltiness)


🔥 Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 180°C / 350°F

  • Line a baking tray with parchment paper


2️⃣ Make the Cheese Filling

In a bowl, mix:

  • Grated cheese

  • Mayonnaise

  • Milk or cream

  • Salt, pepper

  • Garlic powder & herbs (if using)

👉 The mixture should be creamy, not dry.


3️⃣ Assemble the Sandwiches

  1. Lay out 6 slices of bread

  2. Spread a generous layer of cheese mixture on each

  3. Top with remaining bread slices

  4. Lightly butter the top side only of each sandwich

(You can butter both sides if you want extra crispiness)


4️⃣ Bake

  • Place sandwiches on the tray

  • Bake for 10–12 minutes

  • Flip carefully

  • Bake another 5–8 minutes until:

    • Tops are golden

    • Cheese is melted and bubbling

👉 For extra browning, switch to broil/grill for 1–2 minutes at the end (watch closely!)


5️⃣ Rest & Serve

  • Let them rest 2–3 minutes (cheese sets slightly)

  • Slice in half if you like

  • Serve hot 🤤
