Mediterranean Chicken Bowl – Detailed Recipe 🥗🍗

This bowl is inspired by classic Mediterranean flavors: juicy spiced chicken, fresh veggies, creamy tzatziki, and wholesome grains.


Ingredients (Serves 2–3)

For the Chicken

  • 500 g chicken breast or thighs (boneless)

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • 3 cloves garlic (minced)

  • 1 tsp paprika

  • 1 tsp cumin powder

  • 1 tsp dried oregano

  • ½ tsp black pepper

  • ½ tsp salt

  • ½ tsp chili flakes (optional)

For the Grain Base

  • 1 cup rice, bulgur, or couscous

  • 2 cups water or chicken broth

  • ¼ tsp salt

Vegetables & Toppings

  • 1 cucumber (sliced)

  • 1 cup cherry tomatoes (halved)

  • ½ red onion (thinly sliced)

  • ½ cup Kalamata olives

  • ½ cup cooked chickpeas or white beans

  • ½ cup crumbled feta cheese

  • Fresh parsley or dill

  • Pita bread or naan (optional)

For Tzatziki Sauce

  • 1 cup Greek yogurt

  • ½ cucumber (grated & squeezed dry)

  • 1 clove garlic (grated)

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1–2 tbsp fresh dill or mint (chopped)

  • Salt to taste


Instructions

1. Marinate the Chicken

In a bowl, mix olive oil, lemon juice, garlic, paprika, cumin, oregano, salt, pepper, and chili flakes.
Add chicken and coat well. Cover and marinate for at least 30 minutes (up to 8 hours for best flavor).


2. Cook the Grains

Rinse rice or bulgur.
Cook with water/broth and salt according to package instructions.
Fluff and set aside.


3. Cook the Chicken

Heat a grill pan or skillet over medium-high heat.
Cook chicken 5–6 minutes per side until golden, charred, and fully cooked.
Rest for 5 minutes, then slice.


4. Make the Tzatziki

Mix yogurt, grated cucumber, garlic, lemon juice, olive oil, herbs, and salt.
Chill for 10–15 minutes for best taste.


5. Assemble the Bowl

In a large bowl:

  • Add cooked rice/bulgur as the base

  • Arrange sliced chicken on one side

  • Add cucumber, tomatoes, onions, olives, and beans

  • Sprinkle feta cheese

  • Spoon generous tzatziki on top

  • Garnish with fresh herbs

  • Serve with warm pita
