Honey Lime Chicken & Avocado Rice Stack

Ingredients

Honey Lime Chicken

  • 2 boneless, skinless chicken breasts (or thighs)

  • ¼ cup honey

  • Zest of 1 lime

  • Juice of 1½ limes

  • 2 cloves garlic, minced

  • 1 tbsp soy sauce (or coconut aminos)

  • ½ tsp chili flakes (optional but 🔥)

  • Salt & black pepper, to taste

  • 1 tbsp olive oil or butter (for cooking)

Avocado Layer

  • 2 ripe avocados, sliced or diced

  • Juice of ½ lime

  • Salt, to taste

Rice Base

  • 1 cup jasmine or long-grain white rice

  • 2 cups water or chicken broth

  • ½ tsp salt

  • 1 tbsp butter (optional, but recommended)

Herb Drizzle / Garnish (Optional but highly recommended)

  • 2 tbsp olive oil

  • 1 tbsp chopped fresh cilantro or parsley

  • ½ tsp honey

  • Pinch chili flakes

  • Extra lime wedges for serving


Instructions

1. Cook the Rice

  1. Rinse rice under cold water until water runs mostly clear.

  2. In a saucepan, bring water (or broth) and salt to a boil.

  3. Add rice, reduce heat to low, cover, and simmer 15 minutes.

  4. Remove from heat, fluff with a fork, stir in butter if using, and keep warm.


2. Make the Honey Lime Sauce

In a small bowl, whisk together:

  • Honey

  • Lime zest & juice

  • Garlic

  • Soy sauce

  • Chili flakes

Set aside.


3. Cook the Chicken

  1. Pat chicken dry and season both sides with salt and pepper.

  2. Heat olive oil or butter in a skillet over medium-high heat.

  3. Sear chicken 4–5 minutes per side until golden and cooked through.

  4. Reduce heat to medium-low and pour honey lime sauce into the pan.

  5. Simmer 2–3 minutes, spooning sauce over the chicken until glossy and sticky.

  6. Remove chicken and let rest 5 minutes, then slice.


4. Prep the Avocado

  • Toss avocado gently with lime juice and a pinch of salt to keep it fresh and bright.


5. Assemble the Stack

Use a food ring or small bowl for clean layers:

  1. Bottom: Press a layer of warm rice.

  2. Middle: Add avocado slices or chunks.

  3. Top: Place sliced honey lime chicken.

  4. Spoon extra sauce from the pan over the top.


6. Finish & Serve

  • Drizzle with the herb oil.

  • Sprinkle with chopped herbs and chili flakes.

  • Add a lime wedge on top because ✨presentation✨.


Pro Tips

  • Chicken thighs = juicier and more forgiving.

  • Want crisp edges? Broil the chicken for 1–2 minutes after glazing.

  • Swap rice for coconut rice or cilantro-lime rice if you’re feeling extra.
